I made protein cookies that taste just like 🍪 gingerbread cookies!
Gingerbread Protein Cookies Recipe
Ingredients:
Dry Ingredients:
• 3 cups whole wheat flour
• 1/2 cup whey protein powder (or any protein powder of choice)
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 tablespoon ground ginger
• 1 tablespoon ground cinnamon
• 1/2 teaspoon ground allspice
• 1/2 teaspoon ground cloves
Wet Ingredients:
• 2/3 cup grass-fed unsalted butter, softened
• 3/4 cup erythritol (or preferred sweetener in an equivalent amount)
• 1/4 cup honey (adjust based on dough consistency)
• 2/3 cup peanut butter (substituted for molasses)
• 2 large eggs (plus an additional egg if needed for consistency)
• 1 teaspoon vanilla extract
Instructions:
1. Prepare the Wet Mixture:
• In a stand mixer, soften the butter.
• Add peanut butter and mix until creamy.
• Incorporate the eggs and vanilla extract into the wet mixture.
2. Combine Dry Ingredients:
• In a separate bowl, mix all dry ingredients thoroughly.
3. Combine Wet and Dry:
• Gradually add the dry ingredients to the wet mixture in the stand mixer. If the dough is too crumbly, add an extra egg and/or honey to improve consistency.
4. Chill the Dough:
• Once the dough is mixed, chill it in the refrigerator for at least 3 hours. This makes it easier to roll and shape.
5. Shape the Cookies:
• Roll out the dough and use cookie cutters for desired shapes. Be patient, as the texture may be slightly granular due to whole wheat flour.
6. Bake:
• Preheat oven to 350°F (175°C).
• Bake cookies for 9–10 minutes (depending on desired texture). Avoid baking for 11 minutes, as it may result in overcooking.
7. Optional Decorations:
• Use icing, jam, or nut butters (like almond or pistachio butter) for topping, or enjoy them plain.
Notes:
• These cookies are meant for a healthier daily treat, not for indulgence on Christmas Eve.
• Feel free to experiment with substitutions based on dietary preferences, e.g., plant-based protein powder for whey.
