  • 1 pound shrimp peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil

Dip:

  • 1 cup cottage cheese
  • 1/2 cucumber finely chopped
  • Salt and pepper to taste

  • Preheat your kitchen grill to medium-high heat.
  • In a bowl, toss the shrimp with olive oil and Cajun seasoning until well coated.
  • Thread the shrimp onto skewers.
  • Grill the shrimp for 2-3 minutes on each side, or until opaque and cooked through.
  • In a separate bowl, mix the cottage cheese, cucumber, salt, and pepper.
  • Serve the shrimp skewers over leafy greens, with the dip on the side, and my homemade whole wheat bread bun.
