- 1 pound shrimp peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
Dip:
- 1 cup cottage cheese
- 1/2 cucumber finely chopped
- Salt and pepper to taste
- Instructions:
Preheat your kitchen grill to medium-high heat.
In a bowl, toss the shrimp with olive oil and Cajun seasoning until well coated.
Thread the shrimp onto skewers.
Grill the shrimp for 2-3 minutes on each side, or until opaque and cooked through.
In a separate bowl, mix the cottage cheese, cucumber, salt, and pepper.
Serve the shrimp skewers over leafy greens, with the dip on the side, and my homemade whole wheat bread bun.
