Coconut Tilapia with Wild Rice
Ingredients
- 2 Tilapia fillets
- 1/4 cup Coconut flour
- 1/ cup Shredded coconut
- 1 Egg lightly beaten
- Salt and pepper
- 2 Carrots chopped
- 1 cup Broccoli florets
- 1 cup Wild rice
- 2 cup Shrimp stock or regular broth
- Fresh salad greens
- Grape tomatoes
- Balsamic vinegar
Instructions
- Cook wild rice in shrimp stock for extra flavor. When the rice is nearly done, stir in your cooked carrots and broccoli for a simple but amazing side dish.
- Combine coconut flour and shredded coconut on a plate. Season with salt and pepper.
- Dip tilapia fillets into the beaten egg, then coat in the coconut mixture.
- Place the tilapia in the air fryer and cook until the fish is cooked through and golden (time will depend on thickness and your air fryer).
- While the fish cooks, steam or roast your chopped carrots and broccoli florets until tender-crisp.
